Restaurant and Café Renovations in Guelph
Guelph’s Sewer Use By-law (2024)-20911 requires a grease interceptor wherever food is cooked or prepared, cleaned before it is a quarter full. Many downtown restaurants sit in 1800s limestone blocks with apartments above. There the grease duct needs a fire-rated path through those apartments to the roof, which CarpentryBoys confirms before you sign a lease.

Worth knowing first
Stone walls make the kitchen exhaust the hard part downtown
The blocks along Wyndham Street North, Quebec, Macdonell, Carden and Douglas streets date mostly from the 1800s and early 1900s. Many are built of locally quarried limestone, with apartments or offices upstairs and a shared wall on each side. Thick masonry makes a handsome dining room and an awkward kitchen. A new exhaust or make-up air opening in stone needs an engineered lintel. The grease duct has to find a fire-rated path through the apartments above to the roof. We confirm that route and the engineer’s detail before you sign the lease or commit to a cooking line.

Frequently asked questions
Restaurants in Guelph: three local questions
Before grease and solids reach 25% of the trap’s volume, or sooner if the manufacturer says so. Section 9.1 of Sewer Use By-law (2024)-20911 also requires maintenance to CAN/CSA B481, a posted schedule and proof of clean-outs kept for two years. Enzymes, emulsifiers and hot water used to push grease through are prohibited. We size the interceptor so pump-outs stay at a sensible interval.
No. Section 9.5 of Guelph’s Sewer Use By-law (2024)-20911 bans installing or operating a food waste grinder that discharges to a sanitary or storm sewer. If the space has one, we remove it and cap the connection, and scraps go to an organics hauler. Plan the dish area with a scrap strainer and room for organics bins. Leaving a grinder in place risks a City order after you open.
The City lists a one-time $181 + HST application fee and a $243 + HST agreement fee for new applicants. On-street space adds $5 per m² per month + HST. Applications run February 1 to April 1, fees are due April 15, and installation starts the first weekend of May. You need a 10-year encroachment agreement and $2 million of insurance naming the City.
